On the trail of perfect pizza

I’ve been making pizza at home for a while now, mainly because there aren’t any decent pizza shops locally and I wasn’t really feeling like eating from frozen. This dough uses a secret ingredient to help power the yeast and that’s honey.

Pizza dough is surprisingly easy and low maintenance to make ideally it’s best to make the morning you want to eat it. Letting it prove for a long time helps the dough to develop more flavour although if your short on time you can put it together quickly too!

Grandma’s Rice Cake recipe

It’s been a while since I did some baking last and even longer since I made a cake like this one. It’s full of things I don’t normally use to make cakes; butter, eggs and white sugar.

I’ve always loved rice cake though, its a really simple cake and it’s a bit basic. You don’t often find it in cookbooks anymore I guess it’s fallen out of favour, modern cakes would probably use ground almonds or other types of nut. If you’ve never had rice cake in the ground rice gives a really dense texture and due to the amount of butter it’s got a really creamy buttery flavour.

Cheese and beer bread recipe

Sometimes it’s nice to revisit old recipes and with the last of the keg of beer disappearing and becoming quite bitter I thought I’d give beer bread another go. This time I’ve used different types of flour and the addition of herbs and cheese give this bread a real rustic flavour.

Normally I bake my bread in a square loaf tin but recently I’ve been unhappy with the results from the tin, somehow the shape just doesn’t seem to work with homemade bread. Instead I made this one as a boule just by shaping it with my hands and cutting a cross shape into the top.

Pumpkin brownie cheesecake

It’s getting to be a pretty busy time in the studio at the moment as we get closer to christmas I usually try and speed up production time to reduce the wait but unfortunately the 3-4 weeks seems here to stay. Outside it still feels like autumn even though apparently that’s set to change further towards the end of this week.

Chocolate and Apricot Crispy Cake

This last week I’ve been working on a variety of mugs, I’ve been hoping to have a whole kiln load of mugs. They’ll probably end up getting glazed in blue, white and black. They’ll eventually make their way on to the little wren pottery shop if you’d like one!

A few weeks ago I got a craving for some rice crispy squares, now I used to buy these at the supermarket. The last time I got one I found it horribly unsatisfying and so I decided after trawling the internet for a recipe I’d make my own.
