This coming weekend is Easter. I was in a baking mood and looking for something Easter related to make, I’m not much of a fruit cake fan so simnel cake was pretty much out. However I came across a recipe on the BBC good food website for simnel muffins.
I followed the recipe pretty much to the letter until it came to the marzipan. Since I’d bought a whole pack of marzipan and it doesn’t often get used in our house I decided I’d go crazy and use the whole thing. Unfortunately it was a bit too much.
I think if I was to use the recipe again I’d replace the marzipan with chocolate just because I love chocolate and in a way its kinda Easter related isn’t it?
