Back in September I revealed that I’d be writing a Stollen recipe for UK Handmade. You can now find the winter edition of the magazine live containing my article.
If you’ve never made Stollen before because its too difficult or too intimidating I’d love to hear how you got on if you’ve made it. With Christmas fast approaching it’d make a great last minute home made gift.
This year I’ll be making mine on Christmas Eve and sharing it with my family. Last year my Stollen was teetering on the brink of being a disaster, the lessons I learnt from making it have gone into my recipe. Hopefully you won’t have to make the same mistakes as I did!
The only thing I’d change about the Stollen recipe is to make sure you start soaking your fruit long enough. I found 2-3 days wasn’t long enough to develop a strong enough flavour, this time I’ll be steeping mine for at least a week.
