Happy Easter! – Simnel Muffins

This coming weekend is Easter. I was in a baking mood and looking for something Easter related to make, I’m not much of a fruit cake fan so simnel cake was pretty much out. However I came across a recipe on the BBC good food website for simnel muffins.

I followed the recipe pretty much to the letter until it came to the marzipan. Since I’d bought a whole pack of marzipan and it doesn’t often get used in our house I decided I’d go crazy and use the whole thing. Unfortunately it was a bit too much.

I think if I was to use the recipe again I’d replace the marzipan with chocolate just because I love chocolate and in a way its kinda Easter related isn’t it? The muffins are pictured with one of my blue hand thrown bowls, its not currently available in my shop but I’m pretty sure it will be soon!

You might also notice some awesome cake toppers, I could have made some myself but since I decided to make these kinda last minute i downloaded some from the skip to my lou blog.
